Potage Parmentier with Cold Cultured Butter
🥘Ingredients
👨🍳Instructions
Melt 15g butter in a heavy-bottomed pot over low heat; add sliced leeks and 1 tsp salt.
Cover tightly and sweat for 12 minutes without allowing any color to develop, stirring occasionally.
Add sliced potatoes and 1 liter liquid; bring to a simmer and cook uncovered for 20 minutes until potatoes yield entirely.
Transfer hot contents to a high-power blender; puree on high speed for 90 seconds until perfectly smooth.
With the blender running on medium speed, drop in 45g of fridge-cold cultured butter one cube at a time to mount the emulsion.
Season with remaining salt and white pepper; ladle immediately into warmed bowls.
💡Tips
Do not use waxy new potatoes; their low starch content leaves the soup watery and separated.
Ensure the butter is rock-hard from the refrigerator so it shears into microscopic fat droplets rather than melting into an oily slick.
